有一種味道,深深印在我心裡,是梅干菜。梅干菜是一種深植在心中的力量
它陪伴我成長,更是餐桌上的回憶,捏梅干菜丸子是一種很道地的手法,如何拿捏的恰如其分,全憑真功夫,能吃上更是幸福的感覺。
當然,餐桌上少不了山珍海味
但是,梅干菜卻是留著了兒時回憶。<br>梅乾菜是經由醃製風乾而成的半成品食材
聽阿婆說是為了不浪費季節性蔬菜-福菜
所以將新鮮的蔬菜經過處理後
<span>可以將保存期限拉長。<br></span>製作梅乾菜有一個步驟需要把它壓緊實,這時阿婆就會叫我和弟弟上去踩踏,這時我們兒時的樂趣,<br><br>

"desc": "到市場買芥菜,買回來的芥菜用清水沖洗乾淨,再掛起來晾乾水分,晾乾一天後拿下來放在盆裡用鹽巴從頭開始搓一搓搓均勻,搓到有一些出水,再找大一點的容器把他一層一層疊起來,必須壓緊實一點,醃製一個晚上,再把撈起來晾乾水分拿到有太陽的地方曬,依天氣判斷大約曝曬兩天,就可以拿下來第一蒸。",

"desc": "第一蒸一曬:曬乾後的菜乾放蒸十五分鐘後再悶十分鐘,取出再放到太陽下曬乾。\n\n第二蒸二曬:取上一步曬乾後的菜乾再放蒸十五分鐘後再悶十分鐘,取出再放到太陽下曬乾。會發現梅干菜灣漸漸變得金黄,香味更濃郁了。\n\n第三蒸三曬:取第二次曬乾後的菜乾又一次放蒸十五分鐘後再悶十分鐘後取出再次放到太陽下曬乾。\n\n在第三蒸之後,晾曬之前趁着蒸軟時切碎再曬乾也可以,方便以後密封保存和取用。",

"desc": "<span>把苦瓜對剖,用湯匙將薄膜跟籽刮除乾淨後斜切成塊,辣椒斜切備用。<span><br>\n</span>在鍋中加油,放入苦瓜煎至表面金黃,接著放入薑片、蔥白、梅乾菜炒出香氣。接下來放入電鍋,加入水、米酒、醬油、冰糖、辣椒、蔥綠、酸梅,約30分後即可完成。</span>\n\n苦瓜去籽去膜後能降低苦味,酸梅的酸能提升料理味道上的層次。\n\n ",

"title": "什麼是芥菜、酸菜、福菜、梅干菜",
"desc": "<span>芥菜在稻田收割後播撒下種子,成長到2、30公分高,農民陸續採摘食用或醃製酸菜。芥菜都在秋冬季節採收,所以有句俗諺說「六月刈菜假有心」。<br></span><span>醃製菜是客家菜重要的食材。新鮮芥菜採收後,需先日曬約1到2天軟化,再用粗鹽搓揉殺菁後,放入木桶或缸中,一層鹽巴、一層蔬菜堆疊,最上面再放石塊壓下,醃製約7天左右後,就可做出好吃的酸菜(鹹菜)。<br></span><span>大桶醃製的酸菜吃不完,再放下去會發霉、酸掉。早期沒有真空包裝及冷藏技術,客家人發揮智慧,將多餘的酸菜取出,撕成長條狀塗抹點鹽巴,晾在竹竿上或地上日曬,在未全乾、帶有水分時,用筷子裝酒瓶等玻璃瓶罐,塞擠緊密經過3到6個月儲藏,就是福菜 (覆菜)。撕成條狀的酸菜,裝進空酒瓶、醬油瓶或甕內密封保存時,仍保有酸菜水分,瓶子上方狹窄加上地心引力,瓶底會積留較多水分。客家人在醃製保存時,會把瓶口「倒著」放置。<br></span>酸菜再曬醃製福菜時,大都選菜梗部位,剩下的嫩葉也不能丟棄、浪費,繼續日曬到完全曬乾,再捲成圓球狀,就是鹹菜乾 (梅干菜)了。大多數餐館有「梅干扣肉」這道廣東菜,但台灣傳統客家庄都以「鹹菜乾」統稱。<u></u><br>",

"desc": "最喜歡用這道配白飯,梅干菜以冷水浸泡20分鐘(去除鹹味),擠乾水份切碎成1cm左右的大小備用。\n\n<span>將五花肉切成;<a target=\"_blank\" rel=\"nofollow\" href=\"https://icook.tw/wikis/151\">蒜</a>頭及老<a target=\"_blank\" rel=\"nofollow\" href=\"https://icook.tw/wikis/150\">薑</a>切末;<a target=\"_blank\" rel=\"nofollow\" href=\"https://icook.tw/wikis/158\">香菜</a>洗淨備用。</span>\n\n將五花肉片約醃至20分鐘。\n\n將五花肉以1大匙的油煎至表面上色取出備用。\n\n<span>原鍋再倒入1.5大匙的油(梅乾菜很吃油),加入<a target=\"_blank\" rel=\"nofollow\" href=\"https://icook.tw/wikis/151\">蒜</a>末、<a target=\"_blank\" rel=\"nofollow\" href=\"https://icook.tw/wikis/150\">薑</a>末炒香,加入調味料及水煮沸後,轉中小火煮5~6分鐘。</span>\n\n取一大碗公,將五花肉依序排入(先在手中擺上想呈現的樣子,再反過來放入碗公,總之皮那面要朝下),再將梅乾菜及醬汁鋪滿蓋過五花肉片壓緊實,到時倒扣出來,才不會散開\n\n電鍋分2次,分別倒入2杯水,大約蒸80分鐘,再燜15分鐘。(時間可依個人口感調整)\n\n<span>取出後先將碗公的湯汁倒出,再取一深盤蓋在碗公,迅速反轉將梅乾扣肉倒扣在深盤,淋上湯汁,撒上<a target=\"_blank\" rel=\"nofollow\" href=\"https://icook.tw/wikis/158\">香菜</a>擺盤就完成囉!</span>",
